The Food Safety Department launched an oil-testing drive across Sivasagar, a historic Upper Assam town located near Dibrugarh, on Monday. Officials, along with the Food Safety on Wheels (FSW) mobile unit, tested used cooking oil in restaurants by measuring Total Polar Compounds (TPC)—a key marker of oil degradation and related health risks.
Officials Collect 30 Samples for Analysis
Teams collected 30 samples of used cooking oil from eateries and larger restaurants across the town. High TPC levels show that the oil has crossed safe reuse limits and may produce harmful compounds that threaten consumer health. “We collected 30 samples from different food establishments in Sivasagar. Our analysis will focus on TPC levels, which clearly show how degraded the oil is,” a food safety official said.
Department Engages Restaurants in Awareness Session
The department also held a briefing session for restaurant owners and staff. Officials explained safe oil-handling practices and stressed the need to monitor oil quality during daily kitchen operations.
