In response to a quarter of food samples failing to meet quality standards in 2024, the health department has begun enforcing stricter food safety regulations. This includes, notably, the addition of 16 mobile food testing units and the establishment of a new microbiology laboratory in Jaipur to detect bacterial contamination in food items.

Challenges Faced by Health Officials in 2024 Inspections

Between January and December 2024, health officials conducted 17,342 inspections statewide. During these inspections, they encountered significant challenges in assessing the quality of prepared foods, drinks, fruits, and sauces at food service venues. While food safety officers observed contamination and poor hygiene practices, they lacked the necessary laboratory resources to confirm the presence of bacteria or microorganisms, which hindered their ability to take further action.

New Microbiology Lab to Test Food Samples

To address this gap, the state has now set up its first government-run microbiology lab in Jaipur, specifically designed to test food samples for bacteria and other harmful microorganisms. “The microbiology lab will play a crucial role in ensuring food safety by identifying harmful microorganisms, such as pathogens, in food items,” said Pankaj Ojha, deputy commissioner of food safety, to TOI. He further explained that lab reports confirming the presence of harmful bacteria will significantly strengthen legal actions against non-compliant business owners.

The Role of Microbiology Reports in Food Safety

Additionally, Ojha noted, “During inspections, we often find outdated food items that may harbour harmful bacteria like E. coli and salmonella, which can lead to food poisoning and serious infections. With microbiology reports, we can more effectively identify these dangerous bacteria and take prompt action.”
