After the Food Safety and Drug Administration Department (FDA) conducted inspections across Karnataka, idli sales at Bengaluru’s popular darshinis dropped significantly. Customers are increasingly cautious about hygiene, with some specifically asking if cloth is used in the cooking process.

Shift in Customer Preferences

Breakfast spots in areas like Malleswaram, RT Nagar, and Jayanagar report that while loyal and regular customers continue to visit, many now avoid ordering idlis. Restaurateurs acknowledge the inspections but insist they follow strict hygiene standards, using only stainless steel and muslin cloth for preparation. Prajval Shetty, owner of a darshini in Malleswaram, noted a shift in customer preferences. “Despite making fresh idlis throughout the day, sales have dipped. Earlier, people ordered idlis and dosas in nearly equal numbers. Now, they prefer dosas, assuming they are more hygienic since the cooking method is visible,” he explained.

Rising Awareness Among Customers

As per media reports,  customers previously considered idlis a go-to meal when a family member was unwell due to their light and digestible nature. However, following the FDA inspections, they are now more cautious about their breakfast choices. Megha, a customer, shared that she now asks about food preparation methods before ordering. “It’s important for vendors to realize that customers are aware and will speak up if hygiene standards are not maintained,” she said.

Broader Impact on Other Foods

The FDA inspections have influenced purchasing habits beyond idlis. Many customers are now avoiding pastries and cakes after previous reports raised concerns about their quality. Additionally, the popularity of masala puri, a beloved street food, has declined after inspections revealed that vendors frequently use artificial dyes to color green peas, a key ingredient in the dish. As food safety awareness grows, Bengaluru’s eateries face increasing pressure to maintain high hygiene standards and reassure customers about the quality of their offerings.
