FSSAI Mandates Safe Temperatures for Perishable Foods

Key Update

The Food Safety and Standards Authority of India (FSSAI) has directed food businesses to maintain appropriate temperatures when storing and transporting perishable food products throughout the supply chain. It has also instructed state food safety authorities to step up vigilance and take action against violations.

Temperature Abuse Raises Food Safety Concerns

In an advisory posted on social media on Sunday, FSSAI highlighted concerns over the improper handling, storage and transportation of perishable foods such as khoa, paneer, meat and fish. These products are highly susceptible to microbial growth and spoilage when businesses fail to maintain the required temperatures, increasing risks to food safety and public health.

FSSAI noted that the Food Safety and Standards (Licensing and Registration of Food Businesses) Regulations, 2011, prescribe hygiene and sanitary requirements for food business operators (FBOs). These requirements mandate appropriate temperature control throughout the supply chain, from procurement to delivery to the end consumer. The regulator warned that temperature abuse can compromise food safety and violate the prescribed requirements.

FSSAI Specifies Requirements for Food Businesses

The advisory directs FBOs involved in manufacturing, packing, storage, transportation, distribution and sale of these products to ensure strict compliance. Businesses must use clean, covered and hygienic vehicles, maintain the required temperatures during storage and transportation, and use food-grade packaging and suitable secondary packaging materials.

FSSAI has also stressed the need to protect food from dust, moisture, pests, physical damage and cross-contamination during storage, loading, unloading and transportation. Businesses must maintain appropriate records to ensure consignment traceability and produce invoices or other relevant documents when required.

State Authorities Told to Step Up Vigilance

The regulator has directed State Food Safety Commissioners and FSSAI Regional Directors to instruct licensing authorities and food safety officers to maintain strict vigilance during inspections and transportation checks and take action against non-compliance.
